Black glutinous rice has black or purple layer of rice bran which contains a source of phytochemical including, cyanidin 3-glucoside and peonoidin 3-glucoside, the dominant anthocyanins as antioxidant properties. The objective of this study was to develop serum containing black rice extracted. The research is classified into four parts: 1) To compare the antioxidant activity and the tyrosinase inhibitory activity of black rice extracted (Doi Saket Kam Phayao and Leum Pua) were investigated. 2) To study the suitability of producing spray-dried black rice extracted powder which is present in the quantity of cyanidin-3-O-glucoside and the quality of antioxidant activity. Then, the bioactive compound of untreated and plasma-treated black rice extracted were compared. Finally, to develop serum containing black rice extract for anti-skin-aging. The study revealed that black glutinous rice (Oryza sativa L, variety Leum Pua) extracted using distilled water exhibited the higher anti-tyrosinase activity when compared with the Doi Saket and Kam Phayao (p < 0.05). The Leum Pua extracted was highest in Cyanidin-3-O-glucoside. Leum Pua extracted was selected to develop anti-skin-aging serum. Moreover, the bioactive compound of the plasma-treated black rice extracted was 5 times greater than that of the untread extracts. Therefore, the development of serum from plasma-treated black rice extracted by modifying pharmaceutical excipients and type of plasma-treated black rice extracted affected the stability of serum.
