Rice innovation by cold plasma technology could develop and research to add valve for healthier food and cosmetics products from ingredients black glutinous rice with high quality of antioxidant.
Application of low temperature plasma technology for improving the quality of black glutinous rice cooking found that oxygen-generated plasma improved the quality cooking of Leum Pua, Doi Saket, and Phayao, especially, Leum Pua showed softer texture and more glutinous than Doi Saket, and Phayao. In addition, the analysis of hydrophilic property by measuring the water contact angle on the rice seed surface suggested that plasma-treated rice better absorb water. The results could reveal the gelatinization the causing faster cooking process.
Evaluation of bioactive compound of low temperature plasma treated black glutinous rice for probiotic growth promoter and colorant in yogurt showed that plasma treatment offered superior bioactive properties compared with untreated plasma sample. The optimum condition was 20 min of oxygen-generated plasma. The extracts were dried using spray drier and were then investigated in in vitro digestion process. The results showed that Cyanidin-3-O-glucoside content slightly decreased after gastric digestion process, therefore, this bioactive compound can maintain its property for benefit in intestinal digestion process. The application of bioactive compound of low temperature plasma treated black glutinous rice for probiotic growth promoter was then evaluated and the result demonstrated the probiotic growth enhanced due to adding of colorant powder prepared from glutinous rice extract. This study concluded that the bioactive compound of low temperature plasma treated black glutinous rice can be used as probiotic growth promoter in yogurt.
Effect of low temperature plasma treatment on bioactive compounds of black glutinous rice as active ingredient in cosmetic indicated that black glutinous rice (Leum Pua) extracted usingdistilled water exhibited the higher anti-tyrosinase activity when compared with the Doi Saket and Kam Phayao (p<0.05). The Leum Pua extracted was highest in Cyanidin-3-O-glucoside. Leum Pua extracted was selected to develop anti-skin-aging serum. Moreover, the bioactive compound of the plasma-treated black rice extracted was 5 times greater than that of the untread extracts. Therefore, the serum of indigenous glutinous rice extract treated with plasma could be continuous for further study due to efficiency and stability
