The development of grass jelly raw material production and instant grass jelly product was conducted during June to November, 2019 at Maejo University, Chiang Mai. The aim of this study was to develop the appropriate method of raw grass jelly production and the appropriate process of instant grass jelly product. The results showed that the application of chemical fertilizer (15-15-15) and chicken manure gave the best result on growth, yield (dry weight) of grass jelly. In contrast, the application of bat manure and chicken plus bat manure was able to increase the tannin content higher than the application of chemical fertilizer, cow manure, chicken manure and non-fertilizer treatment. Un-shading treatment gave the best result on the highest values of shoot number, fresh and dry weight, phenolic and ursolic contents while the gum and tannin contents were unaffected by this treatment. The harvesting time at 90 days of tree age gave the highest values of plant height and gum content of grass jelly.
