Glutinous rice is a widely consumed staple food, providing energy and nutrients for more than half of the world’s population, particularly in Asia. In fresh or dried young rice leaves show the power for animal and human consumption which providing to chlorophyll, mineral, enzyme and phytochemical component.
This study examined the production of tea and phytochemical constituents from San Pa Tong variety rice leaves. The 9-day old leaves of San Pa Tong variety were used to made San Pa Tong young leaves tea. The soft green with good smell of young leaves tea was processed by drying the fresh leaves at 80 ?c for 60 minutes. The phytochemical constituents from San Pa Tong variety young leaves tea were studied via extraction with hot water in ratio 5:100 w/v. According to the results, the tea leaf extract contained reducing sugar, saponin, flavonoids and terpenoids. The antioxidant properties of San Pa Tong rice leaf tea were estimated. Total phenolic content showed in range 2.16-2.97 mg GAE /g crude extract, whereas the antioxidant activity at 1000 ppm exhibited in 3.81% via DPPH assays and FRAP value shown in 267 ?mol/g of sample. Overall, San Pa Tong variety young leaves represent potential rich sources of phytochemical compounds for a healthy food product.
